Clean eating is all the range at the moment, with Pinterest and Instgram filled with images of smoothies and gluten free foods. But one thing that took my fancy was overnight oats. Perfect for busy people who don't have time in the mornings to make breakfast (so all of us) these oats are delicious and nutritious. The aim of overnight outs is to eat them cold, and leaving the oats to soak in liquid overnight means that they are thick and fluffy - reminding me of a Starbucks Bircher. YUM. Here are my two favourite recipes to try.
PEANUT BANANA & PEANUT BUTTER OATS
INGREDIENTS: 1/3 cup of rolled oats, 1/3 cup of Almond milk, 1 banana, 2 tsp cinnamon, 1/2 cup organic peanut butter, 1/4 cup of fat free yogurt, berries, 1 square of dark chocolate.
HOW TO MAKE: Mush up the banana with a fork in the bottom of a bowl, then add all of the other ingredients and mix them all together well. Make sure the peanut butter gets all over the oats - it can be tough so be sure to put in some elbow grease! Then cover with cling film and pop in the fridge over night. Tada! A delicious bowl of overnight oats are complete.. top with berries and grated dark chocolate for a delicious breakfast treat.
BANANA & BLUEBERRY OATS
INGREDIENTS: 1/3 cup of rolled oats, 1/3 cup of greek yogurt, 1/3 cup of almond milk, 1/2 of a banana, a handful of blueberries, and berries to top.
HOW TO MAKE: Mush up the banana and blueberries together with a fork at the bottom of a bowl, stir in the rest of your ingredients and stir until all mixed together, cover and place in the fridge over night. When out of the fridge strain and place fresh food on the top.
